Cookie Dough Cookies

Ingredients
1 1/4 cups chickpeas1-2 tsp vanilla extract1/4 cup honey1/2 cup + 2 tbsp. natural peanut butterpinch salt (optional)1/2 cup dark chocolate chips
Directions
put all ingredients (except chocolate chips) into food processor. Blend until no 'pea' chunks remain. Add chocolate chips and 'pulse' once or twice or stir in by hand. Drop onto parchment-lined pan; bake for 10-12 minutes (oven will get smokey). Cookies are done when they look drier and have a bit of browning. Let sit on pan until cool.
