Creamy Chicken Salad

Ingredients
2 lbs skinless boneless chicken breast halves1/2 c light mayonnaise1/2 cup plain fat-free Greek yogurt1 Tbs fresh lemon juice1 Tbs white wine vinegar1 Tbs Dijon mustard1 tsp honey1/2 tsp kosher salt1/2 tsp black pepper1/3 cup chopped celery1/3 cup dried cranberries6 cups mixed greens
Directions
Poach chicken, cool and shred.
Combine mayo and next 7 ingredients (through black pepper) in a large bowl. Add chicken, celery and cranberries, toss well to coat.
Refrigerate for 1 hour.
Serve over salad greens

Serving Size: makes 6 servies - 1 cup of chicken salad with 1 cup of greens
