Sour Cream n Chives Chicken

Ingredients
1 1/2 lb boneless skineless chicken breasts1/3 cup reduced fat sour cream1/2 medium yellow onion, diced1 15-oz can reduced sodium chicken broth1 Tbsp flour3 Tbsp fresh chives2 tsp olive oilSalt & pepper, to taste
Directions
1. Season chicken with salt & pepper. Place on preheated grill and cook until done, about 7 minutes.

2. Meanwhile, place 2 tsp olive oil and chopped onion in a deep skillet over medium-high heat and sautee until softened, around 3 minutes. Stir in flour and mix well. Continue cooking until lightly browned, about 3 minutes.

3. Add chicken broth and stir continuously until well combined. Bring to a light boil.

4. Once boiling, stir in sour cream and mustard and mix well. Add chicken breast. Continue simmering 3 - 4 minutes until the sauce has thickened a bit. Add chives and fold in. Serve immediately.
