Simple Tomato Sauce

Ingredients
28 ounces diced tomatoes, drained (salt free)4 cloves garlic, pressed1 tablespoon tomato paste1 teaspoon olive oil1 teaspoon basil leaves, fresh1 teaspoon salt1 teaspoon pepper, ground
Directions
Makes 4 servings

1. Pulse the tomatoes in a food processor until mostly smooth, about ten 1-second pulses; set aside.

2. Cook the garlic, tomato paste, and oil in a medium saucepan over medium heat, stirring constantly, until the tomato paste begins to brown, about 2 minutes. [note: This is best in a regular skillet, not non-stick, but non-stick is fine if that's all you have.]

3. Stir in the pureed tomatoes and cook until the sauce is thickened, about 20 minutes.

4. Off the heat, stir in the basil and season with salt and pepper to taste.

    Wonderful! I added an onion, oregano, rosemary, and thyme to use on pizza. Nobody takes the trouble to cook fresh anymore, but it is soooo worth it! - 12/20/08
