Ingredients
2 Medium Garlic Cloves, minced1 Medium onion, diced1 Cup shredded Carrots1 Medium Sweet Red Pepper, diced1 Medium Celery Stalk, diced2 Small Zucchini, diced1 bag Mann's Broccoli Slaw1 Cup Cooked Mushrooms (sauteed in 1 pat of butter)6 Cups Vegetable Broth1/2 tsp salt, or to taste1/2 tsp black pepper, or to taste2 Bay LeavesAdditional Spices to Taste
Directions
Place all ingredients in a a large soup pot and bring to boil, then reduce heat to low and simmer partly covered for 10 minutes.
