Beet Orange Avocado Quinoa Salad

Ingredients
2 Large Beets (cooked and pickled)1 Orange1 Avocado1 C Dry Ancient Harvest Inca Red Quinoa2 tbsp. balsamic vinegar (if desired)
Directions
Cook quinoa. Chop beets, orange and avocado.
Add to quinoa and sprinkle balsamic vinegar (to taste).

Serve immediately as a warm salad or chill over night and serve cold...
