BLUEBERRY BANANNA BREAD

Ingredients
Butter Spray, for greasing 2 loaf pans1 stick of unsalted butter-softened1/2C.Brown Sugar(the 10 calorie per tsp.)1/2C. Sugar(Stevia/Meijer's brand no calorie)2-Large eggs1 Large ripe Bananna, peeled & mashed 1/4 teaspoon baking soda1 teaspoon baking powder1 Tablespoon ground cinnamon2 teaspoons vanilla extract2C. All-purpose flour1 cup (about 4 ounces) fresh FROZEN blueberries1 Bananna peeled & coarsely choppedFor topping:cover the one loaf with Brown sugar about 1/4C.or so & Spray butter-this will give it a nice crunchy toppingFor the other topping: cover with Coconut Flakes that are sweetened & spray with butter.
Directions
IN LARGE MIXING BOWL CREAM TOGETHER:BUTTER & SUGARS THEN ADD EGGS BEAT WITH MIXER THEN ADD THE MASHED BANANNA.'

NEXT ADD ALL THE DRY INGREDIENTS & MIX WITH MIXER.

THEN STIR IN WITH A SPATULA THE CHOPPED BANANNA 1ST THEN THE FROZEN BLUEBERRIES.BY KEEPING THEM FROZEN IT WON'T TURN YOUR BATTER A BLUE COLOR.

DIVIDE THE BATTER BETWEEN THE 2 LOAF PANS THAT ARE SPRAYED WITH THE SPRAY BUTTER.TOP ONE WITH BROWN SUGAR & SPRAY THAT WITH BUTTER SPRAY THEN TOP THE OTHER WITH COCONUT FLAKES & SPRAY THAT WITH BUTTER SPRAY TOO.

BAKE 350 FOR ABOUT 50 MINUTES OR SO SOME OVEN TEMPS VARY SO IT MIGHT TAKE AN EXTRA 15 MINUTES.CHECK WITH A KNIFE FOR DONENESS.IF COCONUT IS GETTING TOO BROWN TURN OVEN DOWN TO 325 OR COVER WITH TIN FOIL.
