5 medium tomatoes1 cup tomato juice (or more)1 large red bell pepper1 medium cucumber, peeled3+ cloves garlic, peeled1 onion, peeledsalt to tastepaprika (optional, I liked it with)juice of 1/2 lemon (optional)vinegar to taste (red wine or balsamic) (optional)1/4 cup olive oil (optional)
Chop ingredients just enough so you can fit them into your blender or food processor. Blend. Add salt to taste. Can also add lemon juice or vinegar, paprika, and olive oil to improve the flavor. Chill.
