Carrot Applesauce Muffins

Ingredients
1 cup whole wheat flour1 cup white flour3/4 cup sugar2 t. cinnamon2 t. baking powder1/2 tsp. baking soda2 1/2 cups shredded carrots1/2 cup craisins3 eggs1/2 cup skim milk1/2 cup chopped walnuts1/3 cup apple sauce1/2 t. salt
Directions
Pre-heat oven to 350 degrees, spray or line 18 muffin tins.

Mix together all of the dry ingredients: flours, sugar, cinnamon,baking soda, baking powder, walnuts and salt.

In a separate bowl, combine shredded carrots, dried cranberries, applesauce, milk and eggs. Mix until well combined.

Add wet ingredients into dried ingredients and mix until just moistened.

Fill muffin cups 3/4 full and bake for 25-30 minutes.
