Low sodium tomato sauce

1 T Olive oil3 cloves Garlic3 cans tomatoes (organic tends to have less salt)1 T dried parsley1 t oregano (dried)2 t basil (dried)1/2 t salt1 t black pepper
Makes ~8 1/2 c servings
Heat saucepan on medium. Once heated, add the oil.
Peel and chop garlic, then add to pan. Let cook 1-2 minutes, until fragrant but not browning.
Add tomatoes, parsley, oregano, basil, salt and pepper. Stir to combine. Bring to a simmer, then turn to medium low and cook 10-15 minutes.
Use an immersion blender to puree to your preferred consistency (chunkier for pasta, smooth for pizza). If you don't have an immersion blender, use a regular blender, but don't fill more than 1/3 full when hot!
