Ingredients
1.5 cup Israeli couscous1/4 cup olive oil2 tbs lemon juice1 shallot, chopped fineHalf a large cucumber, peeled and choppeda large tomato, chopped1 tbs parsley, chopped1 tbs mint, choppedsalt and pepper to taste
Directions
1. Cook the couscous according to the package. Rinse and drain.
2. Whisk together olive oil, lemon juice and shallot in a bowl.
3. Add the rest of the ingredients to the olive oil - lemon juice mixture and toss.
