Chicken Chow Mein

One tablespoon Smart Balance Buttery SpreadOne half cup chopped onionsTwo cups fresh, sliced mushroomsThree cups diced celeryOne and a half cups low sodium, fat free chicken brothOne tablespoon sugarOne half teaspoon saltThree tablespoons low sodium soy sauceThree tablespoons cornstarchTwo tablespoons water
Melt spread on medium heat. Add onions and mushrooms. Cook until soft. Add celery, chicken broth, sugar, salt, and soy sauce. Simmer about 15 minutes, until celery is cooked. Add chicken, (or turkey breast, pork, etc.) Heat until meat is hot. Mix thoroughly cornstarch with water (should be somewhat thin). Add to pot, stirring thoroughly until thickened and clear. Serve with rice or chow mein noodles, if desired. Either of these will add to the calorie count.
