Creamy Healthy Tomato Basil Soup

Ingredients
1 med yellow onion diced1 cup raw carrots diced1 Tbsp. Olive oil2 garlic cloves minced or grated3 plum tomatoes diced1- 14.5 oz Can of diced tomatoes no salt added1-14.5 oz can of low sodium chicken brothpinch of sea saltpinch of black pepperpinch of red pepper flakes3 oz. Greek yogurt plain3 oz of almond milk unsweetened10 fresh basil leaves
Directions
Dice onion and carrot. Saute in skillet with olive oil about 5 min. Dice tomato and garlic add to pan.Next, add canned tomato,chicken broth, salt,pepper, and red pepper flakes.Cook uncovered 35-40 min.Let cool slightly. Add basil to tomato mixture tearing the leaves,then put all in blender and puree until smooth.Put mixture back in skillet and stir in yogurt and almond milk. Cook over low heat 5 min.
