Hawaiian Chicken Kabobs

2 tsp minced ginger1 clove garlic, chopped1/4 cup low sodium soy sauce1 TBSP honey10oz (half can) of no sugar added pineapple chunks - reserving 3 TBSP of juice16oz boneless skinless chicken breasts1 green bell pepper1 red bell pepper1/4 red onion
Combine ginger, garlic, low sodium soy sauce, honey and reserved pineapple juice. Mix well and set aside. Chop all vegetables and chicken into bite size pieces. Marinade vegetable. chicken and pineapple chunks in soy sauce mixture for 2-4 hours. Soak skewers in water if using wood for at least 30 minutes. Skewer meat, veggies and pineapple. Grill over medium high until chicken is cooked through.
