Easy Skillet "Paella"

* Chicken Breast, no skin, 2 breast, bone and skin removed * *Brown rice, 4 cups cooked * Peas, 1 cup cooked * Carrots, raw, 1.5 cup, sliced * Onions, raw, 0.5 cup, finely chopped * *Extra Virgin Olive Oil, 1 tbsp * Chicken Broth, 1 cup * 1 tbs creole seasoning
Cook the brown rice according to package directions using 1 cup of chicken broth, 1 cup of water and the creole seasoning. While the rice is cooking sautee the onions and carrots in 1 tbs olive oil until onion is translucent and carrots are tender crisp. Add in the chicken and cook until no longer pink. Stir in the peas and cook until heated through. When rice is done mix into the chicken and veggies.
