Introduction

This is a Spanish Version Of Chicken stew a great combination for dinner with rice and beans.. This is a Spanish Version Of Chicken stew a great combination for dinner with rice and beans..

Ingredients

    3 pounds of chicken (your choice) thigh,drumstick,chicken wing, quarter leg) ect. cut in pieces.
    small can of tomato sauce.
    3 tsp sofrito.
    2 tsp olive oil.
    1 tsp ground oregano.
    1 small onion cut in slice
    3 garlic cloves fine chopped
    1 oz red wine or beer.
    1/4 packet goya seasoning (culantro y achiote)
    2 oz of juice of 1 lemon.
    salt and pepper to taste.
    2 basil leaves.
    1 cup of water.

Directions

cut and clean the chicken into small bite size, seasoning with salt, pepper,sofrito,oregano,lemon juice,and garlic...
in a deep pot put a little bit of oil and place the chicken toss it until the chicken is golden brown lower the hit a little bit, put the onion and let it sweat , mixed with the wine,tomato sauce,and basil leaves..put a lid on the pot and let it simmer in low hit for about 35 minutes, uncover the pot and put the hit on medium untill all the water reduce to the medium of the pot, tasted for salt and pepper..serve hot with Rice and Beans or Arroz with gandules..

    Sofrito consists of garlic, onion, paprika, and tomatoes cooked in olive oil. I hope this is right because I too had to look it up. Please let us know if this is what it is. - 11/16/17
