Egg White Omelet (based on Brewed's version)

Ingredients
4 egg whites1/4 C skim milkseasonings (if desired - like salt or garlic)2 Tbsp Olive Oil2 medium slices of an onion2 C raw spinach1/2 C chopped mushrooms 1/2 oz. gouda cheese
Directions
Preheat two small pans over medium heat. Add 1 Tbsp olive oil to EACH pan.

First, chop the onion slices in half and separate the onion layers. Add the onion, spinach and mushrooms to one pan. Stir frequently. Cook til spinach is wilted and onions are translucent.

Meanwhile, beat egg whites and milk till fluffy. Add seasoning; pour into the second pan. Cook till firm.

Ease the egg white omelet onto a plate. Top with sauteed onion, mushroom, and spinach, and finish with 1/2 oz. gouda cheese.
