Brown Rice & Lentil Casserole

Ingredients
3/4 c. dry lentils, rinsed3/4 c. uncooked brown rice 16 oz. package frozen green beans or broccoli cuts2 1/2 - 3 c. reduced sodium chicken, beef or vegetable broth1 c. shredded cheddar cheese
Directions
Heat oven to 350.


Mix lentils, rice, and broth in a 9x9 glass pan. Cover with aluminum foil and bake for one hour.


If needed, add an additional 1/2 cup of broth. Stir in frozen green beans and top with cheddar cheese. Recover and bake an additional 30 minutes.


Broil on medium, uncovered, for a couple minutes to brown the cheese if desired.

Serves 6.
Excellent with fish and chicken, or reheated on its own for lunch!
