Sassy Crab-Corn Chowder

3 ears sweet corn, kernels removed and cobs scraped to remove residual kernels and juices - save one bare cob to simmer in with the soup for extra flavor3 tomatillos, diced1/2 cup diced red bell pepper1 can light coconut milk1/2 can water2 bunches scallions, using all parts except the tip of the white/bulb end, chopped1.5 cups cubed potato (German butter ball variety is best)1 bay leaf2 cloves garlic, minced or crushedSalt and pepper to tasteA few dashes cayenne pepperI can crab meat (I used the one from Trader Joe's)
Put all ingredients except the crab and garnishes in a slow cooker and cook on high 3-4 hours or low 6-7 hours.
