Root Beer Pulled Pork Sandwiches

Ingredients
2 lb boneless pork sirloin roast, fat trimmed2 tsp olive oil2 medium onions, cut into thin wedges4 cups diet root beer2 cloves garlic, minced1/2 cup chili sauce1/4 tsp root beer extract2 tsp hot pepper sauce8 Healthy life hamburger bunsSalt & pepper, to taste
Directions
1. Sprinkle meat with salt and pepper. In a large skillet, heat oil over medium-high heat and add pork. Sear meat until brown on all sides. Transfer meat to slow cooker.

2. Add onions, 1 cup root beer and garlic. Cover and cook on LOW 8 to 10 hours.

3. To prepare sauce: In a medium saucepan, combine remaining root beer and chili sauce. Bring to a boil and reduce heat to a low simmer. Cover and simmer 30 minutes or until mixture has reduced to 2 cups, stirring occasionally. Stir in root beer extract and hot pepper sauce.

3. Remove meat from slow cooker. Using a slotted spoon, transfer onions to a large bowl and discard cooking liquid. Shred pork using two forks and add to bowl with onions. Pour warmed sauce over the meat mixture and stir gently to coat. Serve immediately.
