Curried Coconut Chicken

Ingredients
- 1 lb of chicken breasts (the original calls for 2, but I made mine with 1 and the calories from this recipe only reflect 1lb) - chopped into chunks- 3 tbsp Seasame or vegetable oil- 1/2 large onion, peeled and chopped- 1 green bell pepper, sliced thinly- 2 tbsp curry powder- 3 tbsp granulated sugar- 2 cloves of garlic, chopped (or 2 tbsp pre-chooped garlic)- 1 8oz can tomato sauce- 1 16oz can diced tomatoes- 1 14oz can light coconut milk
Directions
1 - Prepare ingredients by chopping onions and slicing bell peppers, as well as cutting chicken into about 1" cubes
2 - Heat oil in large skillet on medium heat and add curry powder - stirring to mix well.
3 - After curry powder is well mixed, add onions and garlic and bell peppers
4 - After onions are translucent, add cubed chicken and cook until chicken is browned and no longer pink in middle (maybe 10-15 minutes)
5 - Add can of tomato sauce, coconut milk, and diced tomatoes, mix well.
6 - Once liquids are heated, add sugar and mix well
7 - Simmer, uncovered, on medium heat for 45-55 minutes, until sauce thickens, stirring regularly
