Buttermilk low-fat Pumpkin muffins

1 can pumpkin2 egg whites1/2 cup low-fat buttermilk1/2 cup unsweetened applesauce1 cup whole wheat flour1 cup all-purpose white flour1/2 cup splenda blend brown sugar1/4 teaspoon salt1 teaspoon baking soda1/4 teaspoon baking powder1 teaspoon ground cinnamon1/2 teaspoon ground nutmeg1/2 teaspoon ground ginger1/4 teaspoon ground clovesOptional topping: mix 1 oz of ground walnutswith 1 Tablespoon splenda blend brown sugar
Mix pumpkin, egg whites, buttermilk and applesauce in mixer until well blended. Combine flour through ground cloves in bowl, mix with spoon until all ingredients are combined. Add flour mixture to pumpkin mixture and mix until just blended. Spoon mixture 2/3 full in papercup lined muffin pans. Sprinkle the topping equally over muffin in each cup. (topping is figured into calories) Bake at 350° for 20 minutes
