Homemade perfect pizza or pasta sauce

Whole, peeled tomotoes in a can (1 28 oz can), preferbaly plum, unseasonedOne third cup of olive oil--the best you have, can reduce this if you like2 tbsp basil, dired, ground or a big handlful to taste if fresh, torn1 tbsp oregano 2 tsp salt1 tsp pepper (or to taste)2 tsp sugar (it reduces the acidity)
Add tomatoes to a bowl, crush with your hands until small chunks only and remove the hard bits.
Add to a pot and add remaining ingredients.
bring to a bowl and simmer until volume reduces to about half. Freeze or use right away.
Can be refrigerated for a few days before using.
Serving Size: Makes 4 servings on pasta or 4 small pizzas
