Vegan Whole Wheat Zucchini Blueberry Nut Bread

2 "chia eggs" (1 Tbsp chia seeds mixed with 3 Tbsp water) - you can replace with eggs or other egg replacement2.5 Tbsp maple sryup2.5Tbsp dark brown sugar1/2 cup apple sauce1/2 tsp vanilla1/2 tsp nutmeg1.5 cups whole wheat flour1/2 tsp both baking soda and baking powder1.5 cups grated zucchini1/2 cup walnuts, almonds or other nut of choice1 to 1.5 cups blueberries
Mix all ingredients together in order listed until combined but not over mixed. Pour into sprayed loaf pan or muffin tin and bake at 350.

-1 hour for bread (You may need to cover top with tin foil during the last 15 minutes to prevent over browning)
-20 minutes for muffins
