Crispy Quinoa Cookies

Ingredients
1/2 cup Honey1/3 cup brown sugar1/2 cup coconut oil1/2 cup peanut butter 1/2 tsp vanilla1 cup rice flour3/4 cups quinoa flakes1 tsp baking soda1/4 tsp salt
Directions
Heat oven to 350 degrees. Beat honey, brown sugar, coconut oil, peanut butter and vanilla in meddium bowl until creamy.
Combine rice and quinoa flakes, baking soda and salt in small bowl.
Add to wet mixture and beat until well blended. If desired add nuts.
Drop by rounded teaspoonfuls 2 inches apart on ungreasted cookie sheet.
Bake 12-15 minutes until light golden brown.
Cool 1 minute before removing from cookie sheet.
