Bacon-Swiss Scramble (Spark Solution)

Ingredients
1 large egg plus 1 egg white1 slice reduced sodium bacon, cooked and crumbled1/2 ounce low-fat swiss cheese (2tbsp shredded or 1/2 deli slice)1 cup (about 3 oz) fresh spinach
Directions
coat a small nonstick skillet with cooking spray, place it over medium heat, then add the spinach along with a tablespoon of water. cook for 1 minute, stirring often, until the spinach is bright in colour and slightly wilted. add the crumbled bacon and the eggs and continue cooking until the eggs are set, stirring often. then stir in the cheese and remove from heat. the residual heat from the eggs will melt the cheese.
