Spicy Curried Chicken

Ingredients
1/2 Tbsp olive oil1 clove garlic1/3 cup onion, chopped4 oz boneless skinless chicken breast, diced2 tsp all-purpose flour1/2 cup low sodium chicken broth2 Tbsp curry powder1/2 tsp black pepper1/2 cup instant brown rice1 tsp ground cumin1/2 cup green bell pepper, chopped10 baby carrots, thinly sliced1 Tbsp margarine
Directions
Heat olive oil in medium skillet over medium-high heat. Add garlic and onion and saute until golden, about 2 minutes. Add diced chicken and cook until lightly browned, about 5 minutes. Add flour and stir. Add chicken broth and stir to combine. Add curry powder and pepper. Reduce heat to medium-low, cover and simmer for about 10 minutes, or until chicken is cooked through. Stir occasionally. While chicken is cooking, prepare rice according to package directions, adding cumin to the water. In a separate skillet, melt the margarine and saute the green peppers and carrots until soft. To serve, arrange rice on a plate and top with chicken mixture and green pepper/carrot mixture.
