Baked n Breaded Zucchini Rounds

Ingredients
1 zucchini or yellow summer squash1/2 cup Italian seasoned breadcrumbs1 egg2 tablespoons milk (I used 1%)
Directions
Preheat oven to 450. Lightly coat a baking sheet with non-stick cooking spray.

Slice zucchini or summer squash into rounds. Place egg and milk in a bowl and mix. Place breadcrumbs in a bowl. Coat zucchini or squash in egg and milk mixture then dredge in breadcrumbs.

Place rounds on prepared baking sheet. Bake for 10 minutes then flip and bake for 5 minutes more, or until beginning to brown.

Serving Size: makes 12-15 rounds
