Quinoa and Cucumber Salad

Ingredients
1 cup quinoa, dry1 tbsp olive oil2 tbsp red wine vinegar1-1/2 cup cucumber quartered and sliced thinly1/4 cup chopped fresh parsleysalt & pepper
Directions
Bring 1-1/2 cups of salted water to a boil. Add quinoa and reduce to a simmer. Cook until all water is absorbed about 15 mins. Move to a bowl and chill in the fridge.

Once cool, toss with the remaining ingredients, and a dash of salt and pepper. Great right away, even better if you let it chill longer to let the flavors meld.

Makes 4 about 1-1/3 cup servings.
