Chicken & Stuffing Casserole

Ingredients
2 Cups chopped Chicken, light meat1 Tbsp Olive Oil1 tsp Garlic1 fl oz Lemon Juice1 pkg Stove Top Stuffing Mix1 Can Cream of Chicken Soup1 Can Cream of Mushroom Soup1 2C pkg Shredded Colby Jack Cheese, Low Fat4 Tbsp Butter, salted2 Cups California Blend Frozen Vegetables (Broccoli, Cauliflower, Carrots)
Directions
In a large skillet; cook chicken in olive oil with garlic.
While chicken is cooking make stove top stuffing in microwave - omit the butter in the recipe.
When chicken is fully cooked, add lemon juice, butter and both cans of soup.
Stir then add frozen veggies - cover and let simmer for 10 minutes stirring occasionally.
Add shredded cheese and cooked stuffing - stir. Allow to simmer and flavors to merge for 10 minutes.
