Crockpot Chicken Lasagna

1 lb ground chicken2 green bell peppers, chopped1 onion, chopped1 tsp salt1 tsp pepper1 tbsp oregano2 tsp garlic powder2 tsp onion powder1 tbsp minced garlic4 cups spaghetti sauce15 oz part skim ricotta cheese2 cups part skim mozzarella cheese, (divided into 1 cup each)1 egg1 tbsp grated Parmesan cheese1/2 box whole wheat lasagna noodles, (about 8 noodles total)
Brown ground chicken, onion, bell peppers in skillet, (took about 10 min to brown meat). Add spaghetti sauce, minced garlic, onion & garlic powder, salt & pepper, & oregano. Simmer for about 10-15 minutes. While sauce is simmering, mix ricotta, only 1 cup mozzarella, parmesan cheese, and egg in a bowl. Spray crockpot with cooking spray. Start layering meat sauce, noodles, and ricotta mixture. I think I had 3 layers total with the meat sauce being the last. Top with remaining 1 cup mozzarella cheese. Cook on low in crockpot for 3 hours.
