1/4 cup apple butter1/2 cup packed brown sugar2 medium eggs1 cup ( 8oz) sour cream low fat1 cup shredded carrots1/2 cup flacked coconut1/2 cup rasins1 1/2 cups all purpose flour1 tsp baking soda1 tsp ground cinnamon1/2 pecans chopped
In a small mixing bowl, butter, and brown sugar. Add eggs and sour cream then beat well. Stir in carrots, coconut, and raisins. Combine the flour, baking soda, and cinnamon; stir into creamed mixture just until moistened. Fold nuts.
Fill greased or paper lined muffin cups 3/4ths full. Bake t 375* for 20-25 minutes or until toothpick comes out clean. Coll for 5 minutes before removing from pan to wire rack. serve warm.
