1 lb chicken breast tenders2 pkg Ortega Taco Seasoningjiffy pizza crust mix2 tbls oatmeal (ground fine) or 2 tlbs flour1 tbls Olive Oil1 can Ortega Refried Beans2-2 1/2 cups Shredded Lettuce1/2 cup chopped red onion1/2 cup chopped green pepper1 small to medium tomato, diced1/2 cup shredded cheddar cheese1/2 cup Tostitos Cantina Salsa30 Tostitos Cantina Thin and Crispy Chips, broken up a bit
Preheat oven to 375 degrees and bake chicken tenders for 40-45 minutes and cut into bite sized pieces. Mix chicken with taco seasoning and heat together as directed on package. Meanwhile mix pizza crust mix with 1/2 cup water and 2 tbls oatmeal (ground fine) or 2 tbls flour. Coat with olive oil, cover and sit in warm place for at least 20 minutes. When chicken is baked, raise oven temperature to 425 degrees. Coat large cookie sheet with olive oil and spread crust to cover sheet. Bake for 8 minutes and take out of oven and spread refried beans on crust. Spread chicken pieces over beans and put back in oven for another 12 minutes. Cut into 12 squares.
Layer lettuce, veggies and cheese on top of baked pizza. Sprinkle chips over all. Serve with salsa.
