2# pork tenderloin, cut into chunksRed Pepper, chunkedGreen Pepper, chunked1 Large onion, chunked10 Medium mushrooms, I take the stems out and grill caps wholeZucchini about 2 cups sliced1 cup pineapple chunks2 Tbsp olive oilSeasoning salt 16 long wooden skewers
The bulk of the prep work is cutting everything up. Once I cut all the veggies, I place them in a large bowl and drizzle in the olive oil...using my hands, I make sure all the veggies get coated well.
Some people soak the skewers in water 20 minutes or so to keep them from scorching...I skip this step.
Fill up the skewers with the veggies, pineapple and pork. Sprinkle with the seasoning salt and place on grill. Cook until pork is completely cooked.
