Ingredients
2 medium heirloom tomatoes, cut up into bite-size chunks6 oz. fresh mozzarella cheese, cut up into bite-size chunks4 Tbsp. fresh basil leaves, coarsely chopped1 Tbsp. extra-virgin olive oil1 Tbsp. balsamic vinegar
Directions
Toss all ingredients together. Serve immediately or prepare ahead of time to allow flavors to blend. Serve as a salad, side-dish, or a topping for bruschetta or pita chips. Makes about 4 half-cup servings.
