Vegetarian Apple Maple Breakfast Sausages

1 tube (14 oz) Gimme Lean Sausage Style1 small onion, finely chopped2 Tbsp olive oil, divided0.5 tsp salt0.25 tsp ground black pepper2 oz maple syrup (not pancake syrup)1 small apple, peeled and finely chopped0.5 tsp ground cinnamon0.25 tsp ground nutmeg
Saute onion with 1 Tbsp olive oil, salt and pepper until lightly caramelized. In a medium bowl, combine the sauted onions with the apples, spices and maple syrup. Cut a slit down side of sausage tube, and moisten hands with cold water before removing. Mix with other ingredients by hand. Separate mixture into 8 equal-sized patties. Pan fry in remaining olive oil over medium-high heat until each side is browned, approximately 3-5 minutes per side.
