Lemon-Chia Muffins Gluten and Dairy Free

Ingredients
1/2 cup coconut flour1/2 t sea salt1/2 t baking soda6 eggs1/2 cup honey (replace portion with stevia for fewer calories)1/2 cup vegan shortening2 Tbsp lemon zest2 Tbsp chia seeds
Directions
soak chia seeds in 3-4 Tbsp water for 10 min
combine dry ingredients in food processor
process in remaining ingredients, adding chia after liquid has been absorbed
fill muffin cups 2/3 full
bake 350 for 25 minutes; will finish light golden brown
cool completely
