Pan-Fried Pork Chops with Apples

Ingredients
4 - 6 boneless, thin-cut pork chops1 shallot, sliced2 cups apple slices, thin-cut and peeled1 cup apple juice1/4 cup cream or half and half2 tsp sage2 tbsp olive oilsalt and pepper to taste
Directions
-- coat pork chops in salt and pepper, and evenly coat apple slices in sage
-- heat oil in a large frying pan until rippling, and add pork chops. cook until golden brown on both sides. Once cooked, remove chops and cover with foil to keep warm.
-- Add apple juice to deglaze the pan (remove pork bits and oil from the bottom), then add apple and shallot slices. Cook until softened.
-- Add cream and salt and pepper to taste. You can add nutmeg, cinnamon and/or papprika to jazz it up. If too much of the sauce evaporates, add a bit more apple juice.
--Once apples and shallots are sofftened, add chops back to sauce and lower flame. Allow sauce to reduce and thicken, about 5 more minutes.
-- Spoon chop and sauce over brown rice or stuffing (crumble some walnuts into either for added texture and nutrition).
-- Makes 4 servings of one chop each.
