Banana Quick Bread, Low Carb

Bread:1 & 1/2 cup blanched almond flour 1/2 cup coconut flour� tsp sea salt1 tsp baking soda2 tsp cinnamon 8 eggs3/4 cup zero calorie sweetner of choice (I use zSweet)3 TBS coconut oil or butter, melted6 TBS unsweetened almond milk or coconut milk2 ripe mashed bananas1 tsp vanilla OPTIONAL: � cup chopped walnuts or pecans
CAKE:
Preheat oven to 350F.
Combine almond & coconut flour, salt, cocoa powder, cinnamon and baking soda into medium-sized bowl.
Beat eggs & sweetener for about 2-3 minutes.
Add in melted coconut oil, almond milk and extract to the egg mixture.
Mash the bananas, then add to the egg mixture.
If desired add � cup chopped walnuts or pecans.
Stir the wet and dry ingredients together, only stirring enough to combine. Spray loaf or 8" round or square cake pan with coconut oil spray.
Bake about 50-60 minutes, or toothpick inserted into the center comes out clean.
OPTION: Make into donuts! For some reason, everything tastes better as a donut!
GLAZE (not included in nutritional info):
� cup coconut oil (melted)
� cup Swerve Confectioners (or equivalent)
1 tsp vanilla extract
Mix all ingredients and spoon over cooled cake.
