Banana, fresh, 1 cup, mashed1/2 cup Creamy Natural Peanut Butter (salted)3/4 cup Brown Sugar, packed1/4 cup Granulated (white) Sugar2 eggs1/2 cup milk - I used Pure Almond unsweetened, plain1 tsp Cider Vinegarsplash Vanilla Extract 2 Tbsp Flax Seed Meal (ground flax)1.5 cup (heaping) Bob's Red Mill White Rice Flour1/2 (heaping) Bob's Red Mill Potato Starch1/2 cup (level) Bob's Red Mill Tapioca Starch1 tsp (level) Xanthan Gum1 tsp Baking Soda
Blend wet ingredients (through vanilla) together. Mix in the rest until just incorporated fully (no traces of flour). Spoon into 12 lined and greased muffin cups. Bake at 350F for 20 mins or until golden brown and puffy.
