Vietnamese Rice Noodles

Ingredients
4.4 oz of Rice Noodles2 tbs coconut oil1/2 cup of apple cider or rice wine vinegar2 tbs of honey1 tbs lime juice1/2 cup chopped sweet bell peppers1 jalapeno pepper or 5 thai peppers1/2 cup of chopped grape tomatoeschopped cilantro to tastechopped green onions to taste
Directions
Cook the noodles per box instructions. Meanwhile, chop up your peppers and tomatoes. Strain noodles once done cooking. In a non-stick pan on med-high heat, add the coconut oil and allow it to melt. Add all the peppers and tomatoes. "Stir-fry" for about a minute, then remove pan from heat. Add the vinegar, honey and lime juice. Stir and dissolve the honey into the other liquids. Place the cooked noodles in a bowl and top with the pepper mixture. Sir and enjoy!
