Roasted Vegetables with Garlic & Herbs

Ingredients
1 Tbsp Olive Oil1 Tbsp Balsamic Vinegar0.5 Red Pepper 0.5 Green Pepper0.5 Yellow Pepper0.5 cup cherry tomatoes4-5 Garlic Cloves (Peeled)0.5 cup button mushrooms0.5 cup butternut Squash (cubed)0.5 cup sweet potato (cubed)1 Large Onion Cut into chunks1 cup Carrots Sliced in half then in pieces1 Teaspoon dried Herbes de Provence
Directions
Simply toss all prepared ingredients in the mixed olive oil & balsamic vinegar.
Leave to marinate for 5-10 minutes
Preheat oven to 180 degrees
Place in shallow ovenproof dish and bake in centre of oven for 35-40 minutes stirring frequently
Serve with a medium slice of crusty french bread (included in nutritional info)
