Italian Minestrone

Ingredients
2 stalks celerysm. onion (about 1 c)3 tsp garlic 1 md. carrot2c cabbage1 can diced tomatoes & juice11 oz v8 low sodium vegetable juice4 c chicken broth1/2 c whole wheat elbow pasta1/4 c parmesan cheese shreddedbasilparsleyoregano
Directions
Sauté onion, celery, & garlic, until soft. Add carrot, & cabbage, cook until crisp add tomatoes, vegetable juice, & broth, bring to a boil. Reduce heat to low and simmer for 30 min. just before serving add pasta & cheese
