Curried Carrot & Cauliflower Soup

Ingredients
3.5 Cups Carrots, chopped5 Cups Cauliflower, chopped (or 1 head)1 Medium Onion, chopped6 Cups Water5 cloves Garlic, chopped2-3 tsp. Curry Powder1 tsp. Cumin PowderSalt & Pepper to taste
Directions
Saute onion and garlic until tender. Add in spices and saute another 2-3 minutes. Add carrots, cauliflower, and water. Simmer 25 minutes or until tender. Blend in food processor to desired consistency.

Makes approx. 4, 1.5-cup servings
