Benita Instant corn masa flour, 1.25 cup Baking Powder, 1 TbspFlax Seed Meal 1 tbsp Water, tap, 3 TbspTrader Joe's Vanilla coconut milk, 1.5 cup Zucchini, 1 cup, sliced (remove)Yellow Sweet Corn, Frozen, 1 cup kernels - let thawBell Pepper - Red - 1 large Cilantro, raw, 1/4 cup, chopped fineOnions, raw, 1/4 cup, chopped
Combine flax meal with the water and set aside. Combine remaining dry ingredients. Chop all of the veggies. Add milk and flax mixture to the corn flour mixture and whisk to combine. All all of the veggies and the cilantro and mix well. Heat a nonstick skillet on medium low to medium heat and I used Pam olive oil spray to coat the pan. I used a tablespoon and picked up a heaping amount and dropped it into the pan, flattening it with the spoon. It came out to twelve patties for me.
