Quinoa with Manchego and Corn

Ingredients
1c cooked quinoa1 1 TBSP margarine2c frozen corn1/4c minced onion1 tomato diced2 Tbsp chopped cilantro1 TBSP lime juicesalt and pepper4 oz shredded manchego cheese
Directions
In a large skillet melt margarine over med. heat. Add onion and saute 2 minutes. Add corn and saute another 5 minutes. Add tomato, quinoa, salt and pepper. Cook another 8-10 minutes. Lastly, add cilantro and lime juice. Stir in cheese and serve!
