2 slices wheat sandwich bread1/4 cup grated Parmesan cheese2 tbs fresh parsley leaves1 tbs extra virgin olive oil1 garlic clove, gratedsalt and pepper5 cups cherry tomatos (about 1.5 lbs)
1. Preheat oven to 400 degrees. In a food processor, combine the bread, parmesan cheese, parsley,, olive oil, and garlic; season with salt and pepper. Pulse until bread is very coarsley chopped, 4-6 times.
2. In a 8 inch square baking dish, arrange the cheery tomatoes in a layer, sprinkle with crumb mixture from food processor. Bake until the crust is browned and the tomatoes are tender, 20-25 minutes.
