1 Whole Egg4 Egg Whites1/2 C Fresh Spinach1/4 C Chopped Red Onion1/2 C Fresh Mushrooms1 oz Fat-Free Ricotta CheeseOlive Oil Spray
Whip the eggs in a bowl until the yolk is nicely mixed throughout the egg white and then set the bowl set aside.
Spray a non-stick pan with the olive oil spray
Sauté the onions over a High heat; once they begin to sizzle add mushrooms and turn the heat down to Medium
Add the spinach when the onions are transparent
Remove the vegetables once the spinach wilts and set aside on a plate/bowl
Remove the skillet from the stove, re-spray the skillet with the olive oil spray, and then return to the burner
Add the egg mixture to the skillet
Add the vegetables to one half of the omelet, and then sprinkle the Ricotta Cheese on top of the vegetables
Allow the egg to cook until the under side is firm (but the top is still runny)
Gently turn half of the egg round on to the top of the vegetables (creating a half-circle) and allow to cook for another 1-2 minutes
Gently turn the omelet and cook 1-2 more minutes
Slide the omelet on to a plate and enjoy
Serving Size: Makes one huge lo-cal omellet
