Coconut Curry Tomato Sauce

Ingredients
Raw White Onion MediumOlive Oil, 2 1tspGarlic, 3 cloveJalapeno Peppers, 1 pepperGinger Root, 2 tspCanned Tomato13.5 oz can organic coconut milk (light)Cilantro, 1 tbspCurry powder, 1.5 tbsp
Directions
Slice onion, dice jalapeno, garlic and ginger.

Heat oil in pan and add onion, garlic, ginger and jalapeno, cook for about 5 min or until soft.

Add Curry Powder and cook for about 1 minute. Add tomatoes and coconut milk. Simmer for about 20 minutes until sauce thickens.

Garnish with cilantro
