Pork Loin and Sauerkraut

2 lbs. Pork Loin Roast27 oz. sauerkraut undrained2 lge onions sliced thin or chopped2-4 TBS caraway seeds2 Granny Smith apples peeled, cored and sliced or chunks1/2 cup craisins10.75 oz. cream of mushroom soup3-5 cloves garlic sliced thin12 oz. lager beer (Carlsburg)6 medium potatoes (red bliss or new)5 lge. carrots scrubbed, cut in half2 lge stalks celery cut upNo Salt and pepper to taste
Brown pork about 5 min. on each side in oiled skillet.
Add sauerkraut, beer, mushroom soup,onion, craisins, salt and pepper to lge bowl.
Place 1/2 sauerkraut mixture in crockpot
Add Pork loin
Place potatoes around Pork Loin and fork pierce.
Add remaining mixture over pork and potatoes.
Set crockpot on low and cook for 8-10 hours.
Serving Size: makes 10 sevings
